Tikka Chicken Kebabs

Ingredients

  • 500g chicken breasts (raw weight)
  • 175ml fat-free plain yoghurt
  • 5ml (1 tsp) lemon juice
  • 5ml (1 tsp) Cajun spice
  • 1 small handful fresh mint
  • 10ml (2 tsp) olive oil
  • Salt and pepper

Instructions

  • Mix together the olive oil, Cajun spice, raw chicken and seasoning and leave to marinade.
  • Slice the chicken breast into long strips and thread onto kebab sticks.
  • Cook in a 200°C oven for 20 minutes or until cooked through (this can also be done on the braai).
  • While chicken is cooking mix together the yoghurt, finely chopped mint and lemon juice, season and leave to chill in fridge.
  • Serve Cajun chicken sticks with minted yoghurt dipping sauce and wedges of lemon.
