Ingredients
- 500g chicken breasts (raw weight)
- 175ml fat-free plain yoghurt
- 5ml (1 tsp) lemon juice
- 5ml (1 tsp) Cajun spice
- 1 small handful fresh mint
- 10ml (2 tsp) olive oil
- Salt and pepper
Instructions
- Mix together the olive oil, Cajun spice, raw chicken and seasoning and leave to marinade.
- Slice the chicken breast into long strips and thread onto kebab sticks.
- Cook in a 200°C oven for 20 minutes or until cooked through (this can also be done on the braai).
- While chicken is cooking mix together the yoghurt, finely chopped mint and lemon juice, season and leave to chill in fridge.
- Serve Cajun chicken sticks with minted yoghurt dipping sauce and wedges of lemon.
