Ingredients
FOR THE OATS
- ½ cup (40g) Rolled oats
- ½ cup (125ml) Low fat milk
- ½ cup (125ml) Water
- Pinch salt
FOR THE TOPPINGS
- 2 eggs (softly poached/ boiled)
- 200g Baby spinach
- 2 tsp (10ml) Olive oil
- Salt and pepper
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the minced garlic and sauté for 30 seconds.
- Add the baby spinach and stir to coat in garlic and oil mix.
- Cover and allow to steam, stirring occasionally until wilted (5 minutes).
- Meantime, make the oats and poach an egg according to personal preferences.
- Once oats is cooked, spoon into bowls, top with 1 poached egg and steamed spinach.
- Flavour with salt, pepper and spices and serve immediately.
