Ingredients

  • 180g lentils, raw
  • 2 large carrots diced
  • 5 okra, sliced into rings
  • 2 green chillies, chopped
  • 200g aubergines, diced
  • 200g tomato, diced
  • 45ml(3 tbsp) coriander leaves, chopped
  • 5ml (1tsp) tamarind, missed with 15ml (1tsp) water
  • Salt to taste
  • 5ml (1tsp) chilli powder
  • 2ml (½ tsp)mustard seeds
  • 5ml (1tsp) cumin seeds
  • 5ml (1tsp) fenugreek, roasted and crushed into powder
  • 20ml (4tsp) olive oil

Instructions

  • Soak the lentils for 20 minutes.
  • Drain and add 500ml (2 cups) water and boil until soft (add more water if necessary).
  • Heat the oil in a large saucepan.
  • Add the cumin, mustard, fenugreek and fry for 2 minutes.
  • Add the tomato, carrots, okra (you can use marrow or aubergine instead)
  • Chillies, aubergines, coriander leaves and tamarind.
  • Mix to combine. Stir for 5 minutes.
  • Add the lentils and mix well. Add 500ml (2 cups) water and boil for 10 minutes or until the water is just about absorbed.
  • Season with salt
