Lassi is a popular traditional dahi (yogurt)-based drink that originated in India. Lassi is a blend of yoghurt, water, spices and sometimes fruit. It is a filling nutrient rich snack for in between meals.
1 Serve = ½ veg + 1/3 fruit + ½ protein + 1 milk

Ingredients
- 3 small carrots, peeled
- 125ml (½ cup) fresh lemon juice 5cm piece of ginger, peeled and chopped
- 260ml fat-free plain yoghurt
- 750ml (3 cups) fat-free milk
- 150ml freshly squeezed orange juice
- Pinch of salt
Instructions
- If you have a juicer, juice the carrots with the ginger, collecting the juice.
- Combine the yoghurt, milk, orange juice and a pinch of salt in a food processor and pulse until combined.
- If you don’t have a juicer, place the carrots in a steamer, sitting over a saucepan of simmering water.
- Cook for 7 – 8 minutes until soft.
- Chop the carrots and blitz together with the ginger, yoghurt, milk, orange juice and a pinch of salt in a food processor until smooth.
- Pass through a sieve and serve immediately for best results.
