Broccoli and Cranberry Salad

Ingredients

  • 400g broccoli, cut into small florets
  • 200g red onion, sliced
  • 40g dried cranberries

Dressing

  • 120ml low oil mayonnaise
  • 20ml vinegar
  • 20ml (4 tsp) sweetener of your choice

Instructions

  • Combine dressing ingredients in a blender and blend well.
  • Add broccoli to salad bowl and pour dressing over, to cover broccoli florets well.
  • Pour over red onion and cranberries and toss lightly.
