Savoury Oats

Ingredients

FOR THE OATS

  • ½ cup (40g) Rolled oats
  • ½ cup (125ml) Low fat milk
  • ½ cup (125ml) Water
  • Pinch salt
  •  

FOR THE TOPPINGS

  • 2 eggs (softly poached/ boiled)
  • 200g Baby spinach
  • 2 tsp (10ml) Olive oil
  • Salt and pepper

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the minced garlic and sauté for 30 seconds.
  • Add the baby spinach and stir to coat in garlic and oil mix.
  • Cover and allow to steam, stirring occasionally until wilted (5 minutes).
  • Meantime, make the oats and poach an egg according to personal preferences.
  • Once oats is cooked, spoon into bowls, top with 1 poached egg and steamed spinach.
  • Flavour with salt, pepper and spices and serve immediately.
