Ingredients
- 300g potato, cubed
- 1 litre (4 cups) stock or water
- 100g onion, chopped
- 2 stalks celery, sliced
- 500g corn kernels, frozen or canned
Instructions
- Cook the potatoes In stock/ water under tender (about 10 minutes).
- Add the vegetables and simmer for a further 10 minutes.
- Blend in a food processor until smooth.
- Season with a pinch of nutmeg, a squeeze of lemon or salt and pepper to taste.
- Delicious hot or cold.
