Corn Soup

Ingredients

  • 300g potato, cubed
  • 1 litre (4 cups) stock or water
  • 100g onion, chopped
  • 2 stalks celery, sliced
  • 500g corn kernels, frozen or canned

Instructions

  • Cook the potatoes In stock/ water under tender (about 10 minutes).
  • Add the vegetables and simmer for a further 10 minutes.
  • Blend in a food processor until smooth.
  • Season with a pinch of nutmeg, a squeeze of lemon or salt and pepper to taste.
  • Delicious hot or cold.
