Oven Roasted Vegetables

Ingredients

  • 200g Broccoli florets
  • 200g Button mushrooms
  • 200g Butternut, chopped
  • 200g Baby marrow, sliced and quartered
  • 200g Yellow pepper, Sliced and quartered
  • 200g Red onion, quartered
  • 30ml (2 tbsp) olive oil
  • 30ml (2 tbsp) Balsamic vinegar
  • 4 Garlic cloves, crushed
  • 5ml (1 tsp) Thyme, dried
  • Salt and black pepper

Instructions

  • Preheat oven to 180°C. Lightly oil a baking sheet or coat with non-stick spray.

  • Place prepared vegetables in a single layer onto the prepared baking sheet.

  • Rub and toss in olive oil, balsamic vinegar, garlic and thyme.

  • Season with salt and pepper.

  • Gently toss to combine.

  • Place into oven and bake for 12-15 minutes, or until tender.

  • Serve immediately.

    Make a large batch for leftovers
    Store in the fridge for 3 days
