Ingredients
- 180g lentils, raw
- 2 large carrots diced
- 5 okra, sliced into rings
- 2 green chillies, chopped
- 200g aubergines, diced
- 200g tomato, diced
- 45ml(3 tbsp) coriander leaves, chopped
- 5ml (1tsp) tamarind, missed with 15ml (1tsp) water
- Salt to taste
- 5ml (1tsp) chilli powder
- 2ml (½ tsp)mustard seeds
- 5ml (1tsp) cumin seeds
- 5ml (1tsp) fenugreek, roasted and crushed into powder
- 20ml (4tsp) olive oil
Instructions
- Soak the lentils for 20 minutes.
- Drain and add 500ml (2 cups) water and boil until soft (add more water if necessary).
- Heat the oil in a large saucepan.
- Add the cumin, mustard, fenugreek and fry for 2 minutes.
- Add the tomato, carrots, okra (you can use marrow or aubergine instead)
- Chillies, aubergines, coriander leaves and tamarind.
- Mix to combine. Stir for 5 minutes.
- Add the lentils and mix well. Add 500ml (2 cups) water and boil for 10 minutes or until the water is just about absorbed.
- Season with salt
