Chicken in Peanut Butter Sauce

Ingredients

  • 60ml (4 tbsp) low-fat milk
  • 50ml (3 tbsp + 1 tsp) crunchy peanut butter
  • 15ml (1 tbsp) oil
  • 4 chicken fillets, cut into strips (100g each)
  • salt
  • 1 green pepper, cut into strips

Instructions

  • Heat the milk until warm and add the peanut butter.
  • Whisk until well combined.
  • Sprinkle the chicken strips lightly with salt.
  • Heat the oil in a frying pan and fry the strips until almost done.
  • Add half of the peanut butter sauce and simmer for 5 minutes or until the sauce reduces slightly in volume.
  • Add the green pepper to the chicken and cook for about 2 minutes.
  • Stir in the rest of the peanut sauce and cook for 6 minutes or until the sauce starts to bubble.
  • Serve cooked rice for supper from your daily allowance.
