Ingredients
- 60ml (4 tbsp) low-fat milk
- 50ml (3 tbsp + 1 tsp) crunchy peanut butter
- 15ml (1 tbsp) oil
- 4 chicken fillets, cut into strips (100g each)
- salt
- 1 green pepper, cut into strips
Instructions
- Heat the milk until warm and add the peanut butter.
- Whisk until well combined.
- Sprinkle the chicken strips lightly with salt.
- Heat the oil in a frying pan and fry the strips until almost done.
- Add half of the peanut butter sauce and simmer for 5 minutes or until the sauce reduces slightly in volume.
- Add the green pepper to the chicken and cook for about 2 minutes.
- Stir in the rest of the peanut sauce and cook for 6 minutes or until the sauce starts to bubble.
- Serve cooked rice for supper from your daily allowance.
