Chicken Pie

 1 Serve = 1¼ CC + 1 Protein + ½ Milk + 1¼ Fat

Ingredients

  • 400g chicken fillets, cut into cubes
  • 1 green pepper, chopped
  • 360g potatoes
  • 5ml (1tsp) crushed ginger and garlic
  • 1 large onion, finely chopped
  • 20ml (1 ½ tbsp) oil
  • 20g cake flour
  • 10ml (2 tsp) low fat margarine
  • 250ml fat free milk
  • Salt and pepper

Instructions

  • Heat the oil in a saucepan, add the onion, pepper, ginger, garlic and sauté until onions are translucent.
  • Add the chicken and stir fry until chicken is cooked. Set aside.
  • Heat the margarine, add the flour and mix to form a smooth paste.
  • Gradually add the milk and heat to form a smooth sauce.
  • Add the sauce to the chicken mixture.
  • Season with salt and pepper.
  • Simmer gently until the mixture has thickened.
  • Boil the potatoes in lightly-salted water.
  • Drain and slice into rounds.
  • Spoon the chicken mixture into an ovenproof dish.
  • Top with potato and bake in a preheated oven at 180℃ (350℉, Gas Mark 4) until the potato is golden brown.

    Serve with a green salad.
