Ingredients
- 400g chicken fillets, cut into cubes
- 1 green pepper, chopped
- 360g potatoes
- 5ml (1tsp) crushed ginger and garlic
- 1 large onion, finely chopped
- 20ml (1 ½ tbsp) oil
- 20g cake flour
- 10ml (2 tsp) low fat margarine
- 250ml fat free milk
- Salt and pepper
Instructions
- Heat the oil in a saucepan, add the onion, pepper, ginger, garlic and sauté until onions are translucent.
- Add the chicken and stir fry until chicken is cooked. Set aside.
- Heat the margarine, add the flour and mix to form a smooth paste.
- Gradually add the milk and heat to form a smooth sauce.
- Add the sauce to the chicken mixture.
- Season with salt and pepper.
- Simmer gently until the mixture has thickened.
- Boil the potatoes in lightly-salted water.
- Drain and slice into rounds.
- Spoon the chicken mixture into an ovenproof dish.
- Top with potato and bake in a preheated oven at 180℃ (350℉, Gas Mark 4) until the potato is golden brown.
Serve with a green salad.
