Ingredients
- 40ml (2½ tbsp) low-fat margarine
- 1 large onion, cubed
- 1 large green pepper, cubed
- 200g button mushrooms, sliced
- 400g chicken fillets, cut into strips
- 30g flour
- 500ml low-fat unsweetened evaporated milk
- 2ml paprika
- Salt and black pepper
- 300g ribbon pasta, cooked weight
Instructions
- Heat the margarine in a non-stick saucepan.
- Add the onion, green peppers and mushrooms, and sauté for 5 minutes.
- Add the chicken and sauté until cooked. Stir in the flour and mix to combine.
- Add the milk and simmer until it thickens.
- Season with paprika, salt and black pepper.
- Serve the chicken over cooked pasta.
