Chicken a’ La King

Ingredients

  • 40ml (2½ tbsp) low-fat margarine
  • 1 large onion, cubed
  • 1 large green pepper, cubed
  • 200g button mushrooms, sliced
  • 400g chicken fillets, cut into strips
  • 30g flour
  • 500ml low-fat unsweetened evaporated milk
  • 2ml paprika
  • Salt and black pepper
  • 300g ribbon pasta, cooked weight

Instructions

  • Heat the margarine in a non-stick saucepan.
  • Add the onion, green peppers and mushrooms, and sauté for 5 minutes.
  • Add the chicken and sauté until cooked. Stir in the flour and mix to combine.
  • Add the milk and simmer until it thickens.
  • Season with paprika, salt and black pepper.
  • Serve the chicken over cooked pasta.
