Sautéed Chicken Livers with Onions

Ingredients

  • 450g fresh chicken livers
  • 1 large onion, peeled, slices and separated into rings
  • 20ml (4 tsp) oil
  • 5ml (1 tsp) salt, divided
  • Pinch of black pepper

Instructions

  • Pat the livers dry with paper towels, cut them in half, then trim and discard any visible fat or green parts.
  • Heat the oil over medium heat until hot. Add the onions, sprinkle them with ½ teaspoon salt, and then fry them for about 10 minutes, stirring often, until golden-brown.
  • Remove the onions and cover to keep warm. In the same skillet, add the cleaned chicken livers.
  • Sprinkle them with ½ teaspoon salt and a pinch of black pepper.
  • Cook the livers over medium heat until browned but still pink in the middle, 2-3 minutes per side.
  • Divide the cooked livers between plates, top with the fried onions, and serve.
