Tuna Melts with Carrot Salad

The Tuna Melts are simple to prepare and a firm family favourite

Ingredients

  • 2 tins tuna in spring water
  • 1 stalk celery
  • 90ml Weigh-Less Reduced Oil Dressing (or 60ml low oil salad dressing)
  • 20ml (3 tsp) extra light low-fat spread
  • 8 slices rye bread
  • 90g reduced-fat cheese
  • 175ml plain low-fat yoghurt
  • 400g carrots
  • 80g raisins
  • Salt and pepper

Instructions

  • Combine the drained tuna, chopped celery and reduced oil dressing.
  • Melt the reduced fat spread in a large non-stick pan.
  • Spread the tuna mixture evenly over four slices of the rye bread.
  • Top each with some of the grated cheese and remaining slice of bread.
  • Grill in the hot pan.
  • Grate the carrots, season and mix with the raisins and yoghurt.
  • Serve.
