Salmon Cakes

Smoked Salmon Potato Cakes

  • 3 Eggs
  • 30 ml Olive Oil
  • 60 g Instant Potato Powder
  • 40 g Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Lemon juice
  • 1/2 tsp Lemon zest
  • 125 ml Skim Milk
  • 5 ml Chives finely chopped
  • 400 g Smoked Salmon
  • Non-Stick Cooking Spray


  • Mix the eggs, chives, olive oil and milk in a large mixing bowl. Add the potato powder, flour, lemon juice and baking powder and mix well.
  • Heat a large frying pan that has been coated well with non-stick spray.
  • Drop tablespoon sized balls into the hot pan and grill for 1 minute before flipping. 
  • Remove from heat and top with smoked salmon.
