Salmon Cakes

Smoked Salmon Potato Cakes
Ingredients
- 3 Eggs
- 30 ml Olive Oil
- 60 g Instant Potato Powder
- 40 g Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Lemon juice
- 1/2 tsp Lemon zest
- 125 ml Skim Milk
- 5 ml Chives finely chopped
- 400 g Smoked Salmon
- Non-Stick Cooking Spray
Instructions
- Mix the eggs, chives, olive oil and milk in a large mixing bowl. Add the potato powder, flour, lemon juice and baking powder and mix well.
- Heat a large frying pan that has been coated well with non-stick spray.
- Drop tablespoon sized balls into the hot pan and grill for 1 minute before flipping.
- Remove from heat and top with smoked salmon.
