3 Eggs
30 ml Olive Oil
60 g Instant Potato Powder
40 g Flour
1/2 tsp Baking Powder
1/2 tsp Lemon juice
1/2 tsp Lemon zest
125 ml Skim Milk
5 ml Chives finely chopped
400 g Smoked Salmon
Non-Stick Cooking Spray

Mix the eggs, chives, olive oil and milk in a large mixing bowl. Add the potato powder, flour, lemon juice and baking powder and mix well.
Heat a large frying pan that has been coated well with non-stick spray.
Drop tablespoon sized balls into the hot pan and grill for 1 minute before flipping.
Remove from heat and top with smoked salmon.
