360 g Snoek
20 ml Olive Oil
200 g Onions chopped
15 ml Garlic chopped
350 g Tomatoes chopped
1 Green Pepper chopped
60 g Celery chopped
First of all, bone and skin your fish and cut into bite – size pieces.
In a frying pan over high heat, cook onions, celery, green pepper and garlic in the oil for about 4 -5 minutes until the onions start to brown, and then add tomato and spice.
Reduce heat and simmer for 8 – 10 minutes. Add the snoek and cook for another 6 – 8 minutes until fish flakes with fork.
This stew can be served over or with rice from daily allowance.
